Funnel Cake Apple Fries (Print Version)

# Ingredients:

→ Batter

01 - 3 eggs
02 - 1/4 cup sugar
03 - 2 cups milk
04 - 1/2 teaspoon vanilla extract
05 - 1/4 teaspoon kosher salt
06 - 2 teaspoons baking powder
07 - 1 teaspoon ground cinnamon
08 - 3 cups all-purpose flour

→ Apples and coating

09 - 4 Opal apples
10 - 3 tablespoons cornstarch
11 - Vegetable oil, for frying
12 - Powdered sugar, for garnish (optional)
13 - Caramel sauce, for dipping (optional)

# Instructions:

01 - In a large bowl, whisk together eggs, sugar, milk, and vanilla until thoroughly combined. In a separate bowl, mix kosher salt, baking powder, cinnamon, and all-purpose flour. Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
02 - Peel the apples, quarter them, and remove the stems and seeds. Slice each quarter into three even slices. Toss the apple slices with cornstarch until evenly coated.
03 - In a large skillet with deep sides, add enough oil to reach about 1/2 inch up the sides of the pan. Heat over medium heat until a small drop of batter sinks and rises immediately with bubbles forming around it.
04 - Dip each apple slice into the batter, letting the excess drip off. Carefully place into the hot oil and fry, turning occasionally, until golden brown on all sides. Remove and drain on a paper towel-lined sheet to remove excess oil.
05 - Place fried apple slices on a wire rack over a sheet tray to cool slightly. Top with powdered sugar and serve with caramel sauce for dipping, if desired.

02 - Opal apples are suggested for their sweetness and firmness, but other firm apples can be used as substitutes.
