01 - 8 large eggs
02 - 240 ml cottage cheese (0%-2% fat content recommended)
03 - 60 g shredded cheese

04 - 0.25 teaspoon salt
05 - 0.25 teaspoon ground black pepper
06 - 0.25 teaspoon garlic powder
07 - 0.25 teaspoon onion powder

→ Optional Mix-ins (choose up to 1 cup in total)

08 - Chopped fresh spinach
09 - Diced bell peppers
10 - Broccoli florets, chopped
11 - Cooked sausage, diced
12 - Diced ham

# How to Make It:

01 - Preheat oven to 175°C and lightly grease a silicone muffin tray with non-stick cooking spray or oil to ensure easy removal of the egg bites.
02 - Combine eggs, cottage cheese, salt, black pepper, garlic powder, and onion powder in a high-powered blender. Blend until the mixture is completely smooth.
03 - Pour approximately 60 ml (1/4 cup) of the blended egg mixture into each cavity of the muffin tray.
04 - Distribute shredded cheese and your selected mix-ins among the cups. Gently stir each portion with the back of a spoon to incorporate the additions. Top with extra shredded cheese if desired.
05 - Bake for 18–22 minutes or until the egg bites are set and no longer jiggly in the center. Allow them to cool slightly before removing from the tray.

01 - For an egg-white version, substitute whole eggs with 360 ml egg whites (approximately 12 egg whites); note this produces a slightly moister and less fluffy texture.
