Cheesecake Fruit Salad Roll Ups (Print-Friendly Format)

Tortilla roll ups filled with creamy cheesecake, fresh fruit, and a hint of cinnamon-sugar crunch.

# Required Ingredients:

→ Filling

01 - 115 g unsalted butter, at room temperature
02 - 180 g powdered sugar
03 - 170 g cream cheese, at room temperature
04 - 1 teaspoon vanilla extract
05 - 300 ml whipped cream (or 120 ml chilled heavy cream plus 30 g powdered sugar)
06 - 100 g fresh blueberries
07 - 100 g fresh strawberries, small diced
08 - 3 small peaches, peeled and diced
09 - 2 kiwis, peeled and small diced
10 - 60 g fresh raspberries, sliced in half
11 - 56 g sugar-free vanilla instant pudding powder

→ Tortilla and Coating

12 - 4-5 large flour tortillas, at room temperature
13 - 35 g unsalted butter, melted
14 - 100 g granulated sugar
15 - 1 teaspoon ground cinnamon (or to taste)

# How to Make It:

01 - In a chilled bowl, beat the heavy cream until soft peaks form. Add the measured powdered sugar and continue beating until stiff peaks form. Set aside.
02 - In a large mixing bowl, cream together the softened butter, cream cheese, vanilla extract, and powdered sugar until smooth and fluffy.
03 - Fold the whipped cream into the butter and cream cheese mixture until just combined.
04 - Gently fold in the blueberries, diced strawberries, peaches, and kiwi. Reserve raspberries if very soft to scatter later.
05 - Add the instant pudding powder and gently stir in with a rubber spatula until evenly distributed.
06 - Refrigerate the prepared filling for approximately 30 minutes to firm up.
07 - Spread the chilled filling evenly over each tortilla. If reserved, scatter raspberries over the filling.
08 - Roll up tortillas tightly. Brush each roll with melted butter, then roll in the cinnamon-sugar mixture to coat.
09 - Cut each roll into 2 to 2.5 cm thick slices and serve immediately.

# Additional Information:

01 - If raspberries are particularly soft, add them after spreading the main filling to avoid unwanted colour tinting.
02 - For clean slices, use a sharp knife and wipe between cuts.
