Drizzle chicken breasts evenly with extra virgin olive oil and rub to coat. Season generously on all sides with kosher salt and freshly ground black pepper.

Place the chicken breasts directly onto the hot grill. Cover and cook for 5–6 minutes, until they easily release from the grates. Flip and grill for an additional 4–5 minutes.

Baste the chicken breasts with BBQ sauce, flip, and grill for 2 minutes. Repeat on the opposite side, continuing to baste and flip as needed. Grill until chicken is firm to the touch, juices run clear, and an internal temperature of 71°C (160°F) is reached.

Transfer the chicken breasts to a plate, cover with aluminum foil, and allow to rest for 5 minutes until internal temperature rises to 74°C (165°F). Serve with extra BBQ sauce if desired.

Bake chicken in the oven for 15 minutes. Brush the tops with BBQ sauce, return to the oven, and bake for an additional 5–8 minutes until sauce bubbles, begins to char, and chicken reaches 71°C (160°F) internally with clear juices.

Let chicken rest several minutes to reach a final temperature of 74°C (165°F) and allow juices to redistribute before serving.
