Using a high-speed blender, blend the frozen strawberries, sugar, lemon juice or zest, and salt until the mixture achieves a smooth sorbet texture.

If a high-speed blender is not available, allow the frozen strawberries to thaw slightly for processing in a regular blender. Once blended, transfer the mixture into an ice cream machine and churn according to the manufacturer's instructions.
