Sticky Mongolian Beef Meatballs (Print-Friendly Format)

Savory beef meatballs and broccoli coated in a rich Mongolian-style sauce, served over fluffy rice or noodles.

# Required Ingredients:

→ Meatballs

01 - 900 g ground beef
02 - 4 green onions, finely chopped, plus extra for serving
03 - 5 cm fresh ginger, grated or 2 tablespoons ginger paste
04 - 6 garlic cloves, minced or grated
05 - Kosher salt and freshly ground black pepper, to taste

→ Vegetables

06 - 1 head broccoli, cut into florets
07 - 1 tablespoon olive oil

→ Sauce

08 - 1 tablespoon vegetable oil
09 - 240 ml low-sodium soy sauce
10 - 200 g brown sugar
11 - 4 garlic cloves, minced
12 - 2 tablespoons ginger, minced
13 - 160 ml water
14 - 1 tablespoon rice wine vinegar
15 - 0.5 teaspoon red pepper flakes
16 - 2 tablespoons cornstarch, whisked with 120 ml water

→ Garnish

17 - 3 green onions, thinly sliced
18 - Sesame seeds

# How to Make It:

01 - Preheat the oven to 230°C. Line a baking sheet with foil or parchment paper.
02 - Combine ground beef, green onions, ginger, and garlic in a large bowl. Season generously with salt and pepper. Gently mix until just integrated. Shape into tablespoon-sized balls and place on one side of the baking sheet.
03 - Toss broccoli florets with olive oil, salt, and pepper. Arrange on the other side of the baking sheet.
04 - Transfer the baking sheet to the oven and bake for 15 minutes, until the meatballs are cooked through and the broccoli is tender-crisp.
05 - Heat vegetable oil in a large skillet over medium-high heat. Add soy sauce, brown sugar, garlic, ginger, water, rice wine vinegar, and red pepper flakes. Stir well and bring to a simmer; cook for about 10 minutes.
06 - Whisk cornstarch with 120 ml water. Slowly add the mixture to the simmering sauce, stirring constantly, until thickened. Remove from heat.
07 - Add baked meatballs to the skillet with the sauce and toss to evenly coat.
08 - Distribute glazed meatballs with sauce over bowls of steamed rice or noodles. Top with extra green onions and sesame seeds. Arrange roasted broccoli on the side.

01 - Do not overmix the meat mixture to maintain tender meatballs.
