Thoroughly wash the peaches. Leave the skins on if desired, remove the pits, and slice the fruit.

Combine peach slices, honey or maple syrup, and lemon juice in a blender. Blend on high for approximately 1 minute until the mixture is completely smooth.

Pass the blended mixture through a fine mesh strainer or mesh nut bag into a bowl to remove solids. For a lighter consistency, gradually mix in filtered water until desired texture is achieved.

Using a funnel, transfer the juice to a glass jug or jar. Refrigerate and serve chilled.
