Preheat oven to 190°C.

Set up three bowls: one with flour, one with beaten eggs and milk, and one with a mixture of bread crumbs, Italian seasoning, salt, black pepper, and 50 grams of Parmesan cheese.

Dredge each chicken breast in flour, then dip in the egg mixture, and coat evenly with the bread crumb-parmesan mixture.

Heat olive oil in a large skillet over medium heat. Sear chicken for 3–4 minutes per side, until golden brown.

Transfer chicken to a baking dish. Combine shredded mozzarella, remaining Parmesan, and minced garlic; evenly distribute mixture over chicken breasts.

Bake for 20–25 minutes, or until cheese is melted and bubbling and chicken reaches 74°C internal temperature.
