Lightly grease a 33 x 23 cm baking dish with butter or nonstick spray.

Place bread chunks into a large mixing bowl and set aside.

In a separate bowl, whisk together eggs, milk, heavy cream, granulated sugar, light brown sugar, vanilla extract, and ground cinnamon until well combined.

Pour the egg mixture over the bread chunks, add chopped bananas, and gently fold until evenly coated.

Spread the prepared bread mixture into the greased baking dish in an even layer. Cover and refrigerate overnight.

Allow the dish to come to room temperature while preheating the oven to 176°C.

Bake the dish for 35–40 minutes, or until bread is golden and set to desired doneness.

While baking, mix all-purpose flour, brown sugar, and cinnamon for the streusel topping in a medium bowl. Add the butter pieces and incorporate with a fork or pastry cutter until coarse crumbs form.

Once the casserole is nearly baked, remove from the oven and sprinkle the streusel evenly over the top.

Return to the oven and bake for an additional 5 minutes or until the streusel melts and forms a golden crust.
