Tender chipotle-honey chicken served on rice, topped with avocado, tomatoes, corn, and fresh cilantro.

# Required Ingredients:

→ Protein

01 - 450 grams boneless, skinless chicken thighs or breasts

→ Sauce

02 - 2 chipotle peppers in adobo sauce
03 - 3 tablespoons honey
04 - 1 clove garlic
05 - 1 tablespoon lime juice

→ Base and Toppings

06 - 2 cups cooked white or brown rice
07 - 1 avocado, sliced
08 - 1 cup cherry tomatoes, halved
09 - 1 cup corn kernels
10 - Fresh cilantro, chopped, for garnish

# How to Make It:

01 - Blend chipotle peppers, adobo sauce, honey, garlic, and lime juice until a smooth sauce forms. Adjust balance of sweetness and heat to preference.
02 - Coat chicken thighs or breasts in half of the chipotle sauce and marinate for at least 20 minutes. Sear chicken in a preheated skillet over medium-high heat until golden on both sides, then lower heat and cook through. Brush with additional sauce as chicken cooks for enhanced glaze and flavor. Rest briefly, then slice.
03 - Divide cooked rice evenly into serving bowls. Arrange sliced chicken, cherry tomatoes, corn kernels, and avocado slices over the rice.
04 - Finish with fresh cilantro and a drizzle of lime juice. Optional: Add extra toppings such as shredded cheese, sour cream, hot sauce, or sliced jalapeños. Serve warm.

# Additional Information:

01 - For best flavor, prepare the chipotle marinade in advance to allow flavors to meld. Adjust chipotle quantity for desired spice level.
