14 - 1 cup grated apple (e.g., Honeycrisp)
15 - 1/2 cup raisins
16 - 1/2 cup chopped pecans (optional)

# How to Make It:

01 - Preheat oven to 375℉. Line or grease a standard muffin tin. Use a second muffin tin if needed or bake in batches.
02 - In a medium bowl, whisk the flour, oats, baking soda, cinnamon, ginger, and salt until well combined. Set aside.
03 - In a large bowl, whisk the eggs, applesauce, oil, maple syrup, orange zest, and orange juice until well combined.
04 - Pour the dry ingredients into the wet ingredients and stir until just combined. Avoid overmixing.
05 - Using a large spoon or spatula, fold in the grated carrot, apple, raisins, pecans, and ground flax seed, if using.
