01 - 680 g boneless, skinless chicken breast or thighs
02 - 60 ml extra virgin olive oil

05 - 15 ml red wine vinegar
06 - 1 tablespoon dried oregano
07 - 1 teaspoon fine sea salt
08 - 0.5 teaspoon freshly ground black pepper

→ Bowl Base and Toppings

09 - 320 g cooked brown rice or quinoa
10 - 160 g cherry tomatoes, halved
11 - 1 medium cucumber, diced
12 - 0.5 medium red onion, thinly sliced
13 - 80 g kalamata olives, pitted
14 - 80 g feta cheese, crumbled
15 - 1 ripe avocado, sliced
16 - 60 g hummus
17 - 60 g tzatziki sauce
18 - Fresh parsley or dill, chopped (optional, for garnish)

# How to Make It:

01 - In a bowl, whisk together olive oil, lemon juice, minced garlic, red wine vinegar, oregano, salt, and pepper. Add the chicken and ensure it is evenly coated. Let marinate for at least 30 minutes or up to 12 hours in the refrigerator.
02 - Preheat a grill pan or skillet over medium-high heat. Remove chicken from marinade and cook for 5–7 minutes per side, until fully cooked and charred at the edges. Let the chicken rest for 5 minutes before slicing into strips.
03 - While the chicken cooks, slice tomatoes, dice cucumber, thinly slice red onion, and cook the grains if not already prepared. Arrange toppings such as feta, hummus, and tzatziki for assembly.
04 - Divide cooked rice or quinoa among four serving bowls. Top each with sliced chicken, cherry tomatoes, cucumber, red onion, kalamata olives, avocado, and crumbled feta. Add a dollop of hummus and tzatziki to each bowl.
05 - Finish with a sprinkle of chopped parsley or dill and, if desired, an extra squeeze of lemon juice. Serve warm, at room temperature, or chilled according to preference.
