01 - 450 g boneless, skinless chicken thighs
02 - 60 ml olive oil

06 - 1 garlic clove, minced
07 - Kosher salt
08 - Freshly ground black pepper

09 - 6 ears sweet corn, kernels cut from the cob
10 - 2 green onions, thinly sliced
11 - 15 g fresh cilantro, chopped
12 - 60 ml sour cream
13 - 2 tablespoons freshly squeezed lime juice
14 - 1 tablespoon freshly grated lime zest
15 - Kosher salt
16 - Freshly ground black pepper

# How to Make It:

01 - Combine olive oil, lemon juice, hot honey, lemon zest, minced garlic, salt, and pepper in a bowl. Whisk until fully blended. Place chicken thighs in a glass dish or resealable bag. Pour the marinade over the chicken, ensuring all pieces are coated. Cover and marinate in the refrigerator for at least 30 minutes or overnight.
02 - Set the grill to its highest temperature. Allow to heat thoroughly before cooking.
03 - Remove chicken from the marinade and place directly onto the hot grill. Cook for 5 minutes on the first side until the chicken easily releases. Flip the chicken and continue grilling for 5 to 6 minutes, or until internal temperature reaches 74°C. Remove and allow to rest for 5 to 10 minutes. Drizzle with additional hot honey before serving.
04 - In a large bowl, combine sweet corn kernels, green onions, and chopped cilantro.
05 - In a separate bowl, whisk together sour cream, lime juice, lime zest, salt, and pepper until smooth.
06 - Pour the lime dressing over the corn mixture and stir to coat the ingredients evenly. Taste and adjust seasoning as needed.
