Cook pasta in a large pot of boiling salted water according to package instructions until al dente. Drain and set aside.

Toss diced chicken breast with half of the Cajun seasoning. In a large skillet over medium-high heat, add olive oil and cook chicken pieces until golden and cooked through, about 5–6 minutes. Remove chicken from skillet and set aside.

Season shrimp with the remaining Cajun seasoning. In the same skillet, add shrimp and cook for 2–3 minutes until opaque and lightly golden. Remove and set aside with chicken.

Reduce heat to medium. Add unsalted butter to the skillet, then add minced garlic and sauté for 1 minute until fragrant.

Stir in heavy cream and milk. Bring to a gentle simmer, then add Parmesan cheese, cheddar cheese, smoked paprika, red pepper flakes (if using), and salt. Stir until cheeses have melted and the sauce is smooth.

Return cooked pasta, chicken, and shrimp to the skillet with the sauce. Toss until well coated and heated through, about 2–3 minutes.

Transfer to serving plates and garnish with freshly chopped parsley. Serve immediately.
