# Ingredients:

→ For the Truffles

01 - 1 cup sweetened shredded coconut
02 - 1/2 cup dried cherries, finely chopped
03 - 1/2 cup sweetened condensed milk
04 - 1 teaspoon vanilla extract
05 - 1/4 teaspoon salt

→ For the Chocolate Coating

06 - 8 oz dark or semi-sweet chocolate, chopped
07 - 1 teaspoon coconut oil

→ For Garnish (Optional)

08 - 2 tablespoons shredded coconut
09 - 2 tablespoons finely chopped dried cherries
10 - White chocolate drizzle

# Instructions:

01 - In a bowl, combine shredded coconut, chopped dried cherries, sweetened condensed milk, vanilla extract, and salt. Stir until fully mixed and sticky.
02 - Refrigerate for 30 minutes to firm up. Roll into 1-inch balls and place on a parchment-lined tray. Freeze for 15-20 minutes to set.
03 - In a microwave-safe bowl, melt chocolate and coconut oil in 30-second intervals, stirring until smooth.
04 - Using a fork or toothpick, dip each chilled truffle into the melted chocolate, coating evenly. Let excess drip off, then place back on the parchment-lined tray.
05 - Sprinkle with coconut or chopped cherries while the chocolate is still wet. Drizzle with melted white chocolate for a decorative touch.
06 - Refrigerate for 30 minutes until chocolate is set. Enjoy chilled or at room temperature.

# Notes:

01 - Want an extra cherry surprise? Add a whole maraschino cherry inside before rolling.
02 - Use dark chocolate for a richer, less sweet version.
03 - Store leftovers in an airtight container in the fridge for 1 week or freeze for 3 months.
