Greek-Inspired Chicken Gyros (Print-Friendly Format)

# Required Ingredients:

→ Chicken Marinade

01 - 2 pounds boneless skinless chicken breasts
02 - 2 tablespoons olive oil
03 - 2 tablespoons lemon juice
04 - 2 teaspoons smoked paprika
05 - 2 teaspoons ground cumin
06 - 2 cloves garlic, minced
07 - 1 teaspoon ground turmeric
08 - 1 teaspoon ground coriander
09 - 1 teaspoon kosher salt
10 - 1/4 teaspoon freshly ground black pepper
11 - 1/4 teaspoon onion powder
12 - 1/4 teaspoon ground cinnamon
13 - 1/8 teaspoon crushed red pepper flakes

→ Tzatziki Sauce

14 - 1 cup plain Greek yogurt
15 - 2 cloves garlic, minced
16 - 1/2 teaspoon dried dill weed
17 - 2 teaspoons lemon juice
18 - 1 inch piece of English cucumber, peeled and finely diced
19 - Salt, to taste
20 - Freshly ground black pepper, to taste

→ For Serving

21 - 6 pitas or flatbreads
22 - 1 small romaine heart, chopped
23 - 1 cup cherry tomatoes, halved
24 - 1/2 red onion, thinly sliced
25 - 1/2 English cucumber, thinly sliced
26 - Crumbled feta cheese, optional

# How to Make It:

01 - Combine Greek yogurt, garlic, dill, and lemon juice in a bowl. Stir in finely diced cucumber and season with salt and pepper. Refrigerate until ready to serve.
02 - Place chicken in a large bowl or ziplock bag. Mix olive oil, lemon juice, smoked paprika, cumin, minced garlic, turmeric, coriander, kosher salt, black pepper, onion powder, cinnamon, and red pepper flakes in a separate bowl. Pour mixture over chicken, stir to coat evenly, and marinate for 1-4 hours in the fridge.
03 - Heat grill to medium. Oil the grates. Remove chicken from the marinade, letting excess drip off. Grill chicken for a few minutes on each side until cooked through. Let rest before chopping into bite-sized pieces.
04 - Warm or toast pitas. Layer each pita with chopped chicken, romaine lettuce, cherry tomatoes, red onion, cucumber, and tzatziki sauce. Optional: sprinkle crumbled feta cheese on top.

# Additional Information:

01 - Tzatziki sauce and marinade can be prepared up to 2-3 days in advance.
02 - Raw chicken with marinade can be frozen for up to 3 months. Thaw overnight before cooking.
03 - Leftover cooked chicken can be frozen for up to 3 months.
04 - For thinner chicken fillets, slice thick breasts lengthwise (butterfly cut).
