Cook ground beef in a skillet over medium heat, breaking up with a spoon until browned and thoroughly cooked. Drain any excess fat. Add diced onions and continue cooking for 2–3 minutes until softened. Mix in garlic powder, ketchup, mustard, salt, and pepper, cooking for 1 minute more. Remove from heat and let cool slightly.

Preheat oven to 190°C. Line a baking sheet with parchment paper or a silicone baking mat.

Unroll pizza or crescent dough onto a clean surface. If necessary, roll out to approximately 6 mm thickness. Cut into squares or circles for individual pockets.

Place a spoonful of beef mixture in the centre of each dough piece. Top with cheddar cheese and, if desired, diced pickles. Fold dough to enclose filling, pressing edges together with a fork to seal.

Transfer pockets to prepared baking sheet. Brush tops with beaten egg for a golden finish. Bake for 12–15 minutes or until golden brown and crispy. Allow to cool briefly before serving.
