Preheat oven to 177°C. Line a baking dish or sheet pan with parchment paper or aluminium foil sprayed with oil, or spread a thin layer of soft butter directly onto the pan surface for crispier slider bases.

Heat olive oil in a large skillet over medium-high heat. Add finely chopped onions and sauté for 5-6 minutes, stirring occasionally, until golden. Add ground beef and break it up with a spatula, cooking until no pink remains, approximately 3 minutes. Turn off heat, tilt skillet, and remove any excess grease using a spoon or paper towel. Incorporate mayonnaise, barbecue sauce, garlic powder, kosher salt, and black pepper. Mix thoroughly, then taste and adjust seasoning if desired.

Without separating them, slice the Hawaiian rolls horizontally. Arrange the bottom halves in the prepared pan. Cover with half the cheese, layer on the beef mixture, and follow with remaining cheese. Cap with the top halves of the rolls to complete the assembly.

In a small microwave-safe bowl, combine butter, Dijon mustard, and brown sugar. Microwave for 25 seconds and stir to a smooth consistency. Brush the glaze generously over the tops of the rolls, then immediately sprinkle with sesame seeds or chosen seasoning.

Place assembled sliders into the oven and bake, uncovered, for 12-15 minutes. Remove from oven. Using a serrated knife, cut along roll lines to create individual sliders and serve promptly while warm.
