Cheese Savoury Sandwich Filling (Print Version)

# Ingredients:

01 - 75 g Red Leicester cheese, finely grated
02 - 75 g Mature white cheddar cheese, finely grated
03 - 5 tablespoon Mayonnaise
04 - ¼ teaspoon Sweet and mild paprika
05 - ¼ teaspoon Dijon mustard
06 - ⅛ teaspoon Ground black pepper
07 - ¼ Small red pepper, finely chopped
08 - 2 Salad onions, finely diced
09 - 11 Slices Bread (white or brown)

# Instructions:

01 - Finely chop the red pepper and leave to drain on kitchen paper. Finely dice the salad onions. Mix mayonnaise with paprika and Dijon mustard. Grate the cheeses finely and toss together in a bowl. Add pepper and onion, mixing with your hands. Stir in the mayonnaise using a metal spoon. Cover and chill until ready to use.
02 - Trim the crusts from the bread. Cut one slice of bread in half. Lay out 5 full-sized slices and one smaller piece of bread. Stir the filling and generously spread it on each piece of bread using a blunt knife. Top each slice with another of equal size. Cut into small sandwich portions. In total, cut 16 small sandwiches. Cover and serve immediately.

# Notes:

01 - The recipe yields 16 small tea sandwiches measuring approximately 3 x 8 cm, or 4 regular sandwiches if crusts are not removed.
02 - Filling can be prepared 24 hours in advance and stored in the fridge. Stir before use.
03 - Sandwiches should be consumed within an hour to maintain freshness.
