30-Minute Bruschetta Chicken (Print-Friendly Format)

# Required Ingredients:

→ Chicken

01 - 4 boneless, skinless chicken breasts (170 g each)
02 - 2 teaspoons Italian seasoning
03 - 1 teaspoon kosher salt
04 - 1 teaspoon onion powder
05 - 1 teaspoon garlic powder
06 - 1 teaspoon ground black pepper
07 - 1–2 tablespoons olive oil

→ Bruschetta Topping

08 - 450 g ripe tomatoes (3–4 medium), cored, seeded, and diced to 1 cm
09 - 1 teaspoon kosher salt
10 - 2 garlic cloves, minced
11 - 1 tablespoon extra virgin olive oil
12 - 2 teaspoons balsamic vinegar
13 - 2 tablespoons fresh basil leaves, thinly sliced
14 - Ground black pepper, to taste
15 - Balsamic glaze, to taste (optional)

# How to Make It:

01 - Combine diced tomatoes with 1 teaspoon kosher salt and minced garlic in a mixing bowl. Mix thoroughly and set aside to rest while preparing the chicken.
02 - Place one chicken breast between two sheets of parchment paper. Gently pound to an even thickness slightly under 2.5 cm. Repeat for all breasts and set aside.
03 - Stir together Italian seasoning, 1 teaspoon kosher salt, garlic powder, onion powder, and 1 teaspoon ground black pepper in a small bowl.
04 - Brush chicken breasts on both sides with olive oil. Sprinkle seasoning blend evenly over both sides.
05 - Heat grill or grill pan over high heat. Grill chicken for 5–6 minutes per side, or until internal temperature reaches 74°C. Remove from grill and allow to rest for 5 minutes.
06 - Preheat oven to 200°C. Line a baking tray with parchment paper. Arrange seasoned chicken breasts and roast for 10–12 minutes, or until internal temperature reaches 74°C. Let rest for 5 minutes after baking.
07 - Stir extra virgin olive oil, balsamic vinegar, sliced basil, and ground pepper into the tomatoes. Adjust seasoning with additional salt, pepper, or vinegar as preferred.
08 - Spoon bruschetta topping over each chicken breast. Drizzle with balsamic glaze if desired and serve immediately.
