Heat olive oil in a large skillet over medium heat. Add diced onion and cook until translucent, about 3 minutes.

Stir in lean ground beef, minced garlic, smoked paprika, ground cumin, salt, and black pepper. Cook, breaking up the meat, until browned and cooked through.

Add diced sweet potatoes to the pan. Cover and steam for approximately 10 minutes until the sweet potatoes begin to soften.

Mix in sliced zucchini. Cook uncovered for an additional 5 to 7 minutes, stirring occasionally, until the zucchini is tender yet retains some bite.

Remove skillet from heat. Serve hot, garnished with fresh herbs if desired.
