Let bread cubes sit out to become slightly stale.

In a large bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla. Add bread cubes and stir to coat.

Place the bread mixture in the refrigerator for 1 hour.

Preheat oven to 350°F (175°C) and spray a 9 x 13-inch baking dish with non-stick cooking spray.

Pour the soaked bread mixture and any remaining milk into the prepared baking dish. Cover with aluminum foil and bake in the preheated oven for 50-60 minutes, or until a knife inserted in the center comes out clean. Set aside to cool while preparing the sauce.

In a skillet over medium heat, melt the butter. Add brown sugar, cinnamon, nutmeg, and cloves. Stir constantly until the sugar is completely dissolved.

Add heavy cream and stir until combined. Stir in bananas and rum extract until fully incorporated.

Pour the banana sauce over the baked bread pudding. Serve warm and optionally top with vanilla ice cream.
