Asiago Chicken Creamy Gnocchi (Print-Friendly Format)

01 - 3 boneless, skinless chicken breasts (approximately 680 grams), pounded to even thickness
02 - 0.5 teaspoon kosher salt
03 - 0.25 teaspoon freshly ground black pepper
04 - 5 tablespoons unsalted butter, divided
05 - 1 medium shallot, diced (about 50 grams)
06 - 1 teaspoon garlic, minced
07 - 3 tablespoons all-purpose flour
08 - 480 millilitres chicken broth
09 - 120 millilitres half-and-half
10 - 450 grams potato gnocchi, uncooked
11 - 60 grams Asiago cheese, finely grated
12 - 60 grams fresh baby spinach
13 - Chopped fresh parsley, for garnish

# How to Make It:

01 - Pat chicken breasts dry and season both sides evenly with kosher salt and black pepper.
02 - Heat 2 tablespoons of butter in a large non-stick skillet over medium heat. Add the chicken breasts and cook for 8 to 10 minutes, turning halfway through, until fully cooked and internal temperature reaches 74°C. Transfer chicken to a plate and cover loosely with foil.
03 - In the same skillet, add remaining 3 tablespoons butter. Once melted, add diced shallot and cook, stirring frequently, until softened, about 3 minutes. Add minced garlic and cook for 1 additional minute.
04 - Sprinkle all-purpose flour over shallot and garlic mixture. Whisk for 1 minute to fully incorporate and cook the flour until it turns slightly golden.
05 - Gradually pour in chicken broth while whisking constantly to deglaze the skillet and avoid lumps. Simmer for 3 to 5 minutes until the sauce slightly thickens.
06 - Add half-and-half and uncooked potato gnocchi to the skillet. Stir gently to ensure gnocchi is submerged in the sauce. Cook for 5 to 7 minutes, stirring occasionally, until gnocchi is tender and cooked through.
07 - Stir in fresh baby spinach and grated Asiago cheese. Cook for 2 to 3 minutes until spinach is wilted and cheese is fully melted into the sauce.
08 - Remove skillet from heat. Arrange cooked chicken breasts on top of the gnocchi mixture. Garnish with chopped fresh parsley and serve immediately.
